Traditionally, pasta only contains three main ingredients: flour, eggs and salt. When it comes to the flour, it is usually made with either semolina or all-purpose flour. The results will be different, since semolina is higher in protein and will give a more strong, pliable dough. Eggs help to bind the pasta, while salt gives it flavour. Olive oil or water is sometimes added as well.
There are a few options for mixing the dough. The method that requires the least work is to use a stand mixer with the dough attachment. All you have to do is add the ingredients and let the mixer take care of it. If you don’t have a stand mixer, you can give yourself a good workout by kneading the dough by hand.
If mixing by hand, start with the dry ingredients on your work surface. Shape a well in the centre of them and then add the eggs to the well. Using a fork, stir the eggs into the flour until well incorporated. At this point, you can start kneading the dough until it becomes soft and pliable which usually takes a few minutes.
For rolling the dough, a pasta machine is the easiest and best solution. If you don’t have one, simply use a rolling pin and your counter. You should divide the dough into small batches so it’s easier to work with each one at a time. A bit smaller than your first is a good guideline. Wrap the pieces that aren’t being worked with in plastic so that they don’t dry out. Roll the dough to the desired thickness. It should be nearly translucent at the final thickness.
When it comes to shaping the pasta, any thin, flat shapes can easily be done with a pasta machine or by hand. More complex shapes may require special attachments or cutters.
